Twice Baked Potatoes
These were a nice compliment to the grilled flank steakwe had tonight. My son liked them so well that he ate 5 of them!! These freeze really well. Once you have filled the potato skins with the filling, freeze them on a cookie sheet until set; then wrap individually with plastic wrap. Place them in a gallon size freezer bag and you are ready to go. (more…)

Scalloped Potatoes and Ham
The kids and I really liked this meal. Truth be told, my dear husband did not. However, as he does not enjoy ham or scalloped potatoes, I don’t think is opinion of this recipe counts 🙂 This meal is a nice change from the typical chicken or beef recipes and is really easy to make. It only takes a total of 4 1/2 hours to bake in the slow cooker, so it is a nice option for those days you want a slow cooked meal, but didn’t have time to get it in started in the morning. (more…)

Sour Cream Potatoes
I love these potatoes! My whole family is happy when I make them. It is good old fashioned comfort food. Creamy, cheesy and buttery…what’s not to like? Sometimes I add in cooked chicken or ham to make it a main dish. I do not usually use ‘cream of…soup’. However, we love these potatoes so much I keep a few cans on hand just for this recipe. I need to do some experimenting to see if I can make them taste just as good without the soup. (more…)
