These are sooo good! My son even asked me to make them instead of a Birthday cake. You really have to go by touch when adding the flour, so pay attention.
They are worth the effort I promise you!

Cinnamon Rolls
Cinnamon Rolls…So soft and warm and delicious! I like to spread the frosting on while they are still warm (not hot) so it melts a little bit. Only half my family likes raisins, so I make the pan half and half. Two 9×13 pans fit in my oven quite nicely together so I often double the recipe. If you want a smaller batch, just cut the recipe in half and bake in a round cake pan. I have found some great metal (not disposable) pans at my dollar store. I use them when I want to keep a pan and share one with a friend. Since the pan only cost a dollar, I don’t worry about whether I get it back or not. (more…)

Caramel Banana Muffins
This is one of my go-to recipes whenever I have bananas that are at the overripe stage. They are easy to make and freeze well after the icing has set. I like to wrap them individually and then store them in a gallon size freezer bag. When the kids pack their lunches, they just pull one out of the freezer. They defrost by lunch time. I love the glaze, so I usually double it when I make muffins. You can double the recipe and bake it in a large jelly roll pan. I have taken these lovely muffins to many gatherings and received rave reviews each time. I’ve even tried them with 1/2 wheat flour. Either way they are delicious! (more…)

Monkey Cupcakes
These cute Monkey cupcakes stole the show when I made them for my sons class. They were easy to make and the kids loved them. Make whatever flavor of cupcakes you like. I’m sure you could use a number of different food items to create the details. I used Lady Finger cookies cut in half for the ears, Nilla wafers for the mouth area and MnM’s for the eyes.
