Girls Camp Menu
My brain is so full right now, it just may burst. I am cooking for our church girl’s camp again this year. There will be about 135 people to feed on a budget. I do have a kitchen to work in, so most things are going to be made from scratch.

One Pot Chicken Lo Mein
This one pot chicken recipe has a nice savory flavor by combining soy sauce, garlic and broth. The chicken and vegetables round it out to a very satisfying meal.
One Pot Lemon Chicken Pasta
Lemon and Chicken are one of my favorite flavor combinations. Put that together with the ease of a one pot meal and you have a winner! It comes together quickly and the taste just tickles my tongue 🙂
One Pot Chicken Parmesan Pasta…I can’t tell you how much we like this one. I made it for the first time last week and fell in love. It’s a little different from most one pot meals, but still easy and oh so tasty. The crunchy topping really makes this dish.

Winter has held on far too long this year.
We served these on mini-croissants at a Women’s Conference at our church recently. About 150 women attended. We had a great time together and enjoyed munching on these lovely sandwiches.
Chicken Salad Sandwiches with a Hint of Lime
These are easy to put together and look so nice. My boys like them made on Hawaiian rolls too. The recipe makes 5 cups of chicken salad. The size of roll you serve it on with determine how many servings you will get.
Sweet Curried Chicken
My family really enjoys a sweet curry I have made from a box mix. I did not love it so much. When I came across a recipe to make my own, I decided to give it a try. The results? 5 stars from all of us! I like that I can vary the curry flavor to my own taste and we all loved the curry-citrus sauce. I adapted it to make it easier and to suite my families tastes. I hope you like it too!
Sweet Baked Chicken
I just got back from a two week trip to visit family and to take my daughter to get her wisdom teeth removed. It was a busy trip and I am happy to be home again. While I was there, I ate some leftover baked chicken my mom had made the night before. It was really good, slightly sweet and nice and moist. I couldn’t determine what she had used for the flavor, so I asked her. She smiled a little sheepishly and said “Well, I was out of corn flakes so I used Frosted Flakes.” I decided to try it out on my family last night and it was a hit! This recipe is super easy and tastes great!
Almond Crusted Chicken
I’ve had such a lovely day today. My dear daughter is home from college for a visit. We spent the day shopping 🙂
When we got home we made up this recipe for dinner and I loved it!
The Italian dressing gave it nice flavor and the almond crust was as pretty as it was delicious.
Mexican Chicken and Rice
This recipe is a product of the last minute “What’s for dinner mom?” dilemma. It had been a crazy day and I was hunting through my cupboards and refrigerator to find something to throw together. We really liked the result and it was nice to use up some of my leftovers at the same time.
