GIRL’S CAMP!!

  My brain is so full right now, it just may burst.  I am cooking for our church girl’s camp again this year.  There will be about 135 people to feed on a budget.  I do have a kitchen to work in, so most things are going to be made from scratch.

Today’s post is a just a quick one to share the menu I’ve planned as well as the recipes.  I have written them up with a single batch and multiplied out to the quantities I use for camp.  These are great recipes for family reunions too. Continue reading »





Chicken Salad Sandwiches with a Hint of Lime

Chicken Salad Sandwiches.  It’s time for light lunches and nicer weather.
Winter has held on far too long this year.

We served these on mini-croissants at a Women’s Conference at our church recently.  About 150 women attended.  We had a great time together and enjoyed munching on these lovely sandwiches.

These are easy to put together and look so nice.  My boys like them made on Hawaiian rolls too.  The recipe makes 5 cups of chicken salad.  The size of roll you serve it on with determine how many servings you will get.

Sweet Curried Chicken

My family really enjoys a sweet curry I have made from a box mix.  I did not love it so much.  When I came across a recipe to make my own, I decided to give it a try.  The results?  5 stars from all of us!  I like that I can vary the curry flavor to my own taste and we all loved the curry-citrus sauce.  I adapted it to make it easier and to suite my families tastes.  I hope you like it too!

Sweet Baked Chicken

I just got back from a two week trip to visit family and to take my daughter to get her wisdom teeth removed.  It was a busy trip and I am happy to be home again.  While I was there, I ate some leftover baked chicken my mom had made the night before.  It was really good, slightly sweet and nice and moist.  I couldn’t determine what she had used for the flavor, so I asked her.  She smiled a little sheepishly and said “Well, I was out of corn flakes so I used Frosted Flakes.”  I decided to try it out on my family last night and it was a hit!   This recipe is super easy and tastes great!
