Have you been wondering what to do with that bumper crop of zucchini? Perhaps a desperate neighbor left a pile of giant zucchini on your front porch. This is a great basic recipe for Zucchini bread with a few variations to try. We really like the blueberry with a touch of lemon and of course the chocolate chip!

Ingredients
- 3 eggs
- 1 cup vegetable oil
- 1 Tbsp vanilla extract
- 1 cup sugar
- 1 cup brown sugar
- 3 cups shredded zucchini
- 2 cups all purpose flour
- 1 cup whole wheat flour
- 1 tsp salt
- 1 tsp baking powder
- 1 tsp baking soda
- 2 tsp cinnamon
- ½ tsp nutmeg
Instructions
- Preheat oven to 350 degrees.
- Lightly grease 2 loaf pans.
- In a large bowl, beat together eggs, oil, vanilla, sugar and brown sugar.
- Fold in the zucchini.
- Mix in salt, baking powder, baking soda, cinnamon and nutmeg.
- Beat in the all purpose flour and whole wheat flour.
- Fold in optional ingredients of your choice
- Bake 60 minutes or until a knife inserted in the center of a loaf comes out clean. (Baking time may vary depending on the size of pan you use.)
- Cool 20 minutes in pans, then turn out onto a wire racks to cool completely.
Variations
- Lemon Blueberry – Add 1 ½ cups blueberries and ½ tsp lemon extract *The picture above shows this variation
- Chocolate chip – Add 1 cup chocolate chips
- Nuts – Add 1 cup chopped walnuts or pecans
