Wheat Blender Pancakes

There are several versions of this recipe out there. This one is pretty simple and tastes great! It’s a nice way to use wheat without having to have a wheat grinder. I’ve taught a few food storage classes and used this recipe as a sample. Everyone has enjoyed them and were surprised they are whole wheat. These freeze well too.

Ingredients
  • 1 ¼ C. water
  • 1 C. whole wheat kernels
  • ¼ C. powdered milk
  • 1 egg
  • 2 tbsp oil
  • 1 tbsp honey or sugar
  • ¼ to ½ tsp salt
  • 1 tbsp baking powder
Instructions
  1. In blender, mix water, wheat kernels, and dry milk on high for 3 minutes. (Don’t cheat on the 3 minutes or you will have crunchies.)
  2. Add egg, oil, honey and salt. Blend for 20 seconds.
  3. Add baking powder. Pulse 3 times, just enough to mix. Mixture should foam up and get very light.
  4. Cook immediately on a hot nonstick griddle.
