Snickerdoodles (lightened up)

I decided to play with this recipe to see if I could lighten it up a bit. I LOVE them even more than the originals. They are soft and taste even better!  I ask people to try and guess the secret ingredient.  Only a very few have guessed pumpkin.  You really can’t taste it, but it makes this cookie my ABSOLUTE favorite!

Ingredients
  • ½ C. shortening
  • 6 Tbsp solid pack pumpkin
  • 1 ½ C. sugar
  • 2 egg whites
  • 1 tsp baking soda
  • ¼ tsp salt
  • 2 tsp cream of tartar
  • 2⅔ cups flour
Spice-sugar mixture
  • ¼ cup sugar
  • 1 tsp pumpkin pie spice
Instructions
  1. Beat together shortening, pumpkin, sugar and egg whites.
  2. Add flour, cream of tartar, baking soda and salt; mix together.
  3. Pinch off a small amount and roll into a small ball (about 1”)
  4. Roll in pumpkin pie spice-sugar mixture and place on a greased cookie sheet.
  5. Bake at 375 degrees for 10-12 minutes. Cookies are done when they are lightly browned. Do not overbake or they will be crispy instead of soft.
