I decided to play with this recipe to see if I could lighten it up a bit. I LOVE them even more than the originals. They are soft and taste even better! I ask people to try and guess the secret ingredient. Only a very few have guessed pumpkin. You really can’t taste it, but it makes this cookie my ABSOLUTE favorite!
Snickerdoodles (lightened up)

Ingredients
- ½ C. shortening
- 6 Tbsp solid pack pumpkin
- 1 ½ C. sugar
- 2 egg whites
- 1 tsp baking soda
- ¼ tsp salt
- 2 tsp cream of tartar
- 2⅔ cups flour
Spice-sugar mixture
- ¼ cup sugar
- 1 tsp pumpkin pie spice
Instructions
- Beat together shortening, pumpkin, sugar and egg whites.
- Add flour, cream of tartar, baking soda and salt; mix together.
- Pinch off a small amount and roll into a small ball (about 1”)
- Roll in pumpkin pie spice-sugar mixture and place on a greased cookie sheet.
- Bake at 375 degrees for 10-12 minutes. Cookies are done when they are lightly browned. Do not overbake or they will be crispy instead of soft.
