Roasted Green Beans

My friend Barbara shared this recipe with us when we were visiting her house. My kids loved it so much they begged me to get the recipe and make it for them. It has become a family favorite.

As the green beans roast, they do reduce in size, so remember that as you are buying them.

  • 1 pound green beans, stem ends snapped off
  • 1 Tbsp olive oil
  • Salt and ground black pepper
  • 1 Tbsp minced garlic (about 3 medium cloves)
  • 1 tsp minced fresh ginger
  • 2 tsp honey
  • ½ tsp toasted sesame oil
  • ⅓ tsp hot red pepper flakes
  • 4 Tbsp toasted sesame seeds.
  1. Adjust oven rack to middle position; heat oven to 450 degrees.
  2. Line rimmed baking sheet with aluminum foil; spread beans on baking sheet.
  3. Drizzle with olive oil; toss to coat evenly. Sprinkle with salt and pepper, toss to coat, and distribute in an even layer.
  4. Roast 10 minutes.
  5. Meanwhile, combine garlic, ginger, honey, sesame oil and red pepper flakes in a small bowl and set aside.
  6. Remove baking sheet from oven.
  7. Using tongs, coat beans evenly with sauce mixture; redistribute in an even layer.
  8. Place baking sheet back in the oven and continue to roast until green beans are dark golden brown in spots and starting to shrivel, about 10-12 minutes longer.
  9. Transfer to a serving dish, sprinkle with toasted sesame seeds, and serve. Yields: about 4 servings.
  1. I usually use ground ginger from my spice cupboard.
  2. I double the recipe for my family and use my large roasting pan. It has a nonstick surface, so I do not use the foil.
  3. You can sauté some chicken or use leftover steak and add to the finished product to make this recipe a main dish.
