I’ve had so much fun today making these yummy cupcakes. They are made with diet soda in place of the oil and eggs in the recipe. They are very low calories and, Oh so delicious!

- 1 box Betty Crocker Super Moist cake mix
- 1 can (12 oz) diet Soda
- 1 egg white
- Liberally spray mini muffin pans with non-stick cooking spray.
- Mix cake mix, sprite and egg together until thoroughly combined.
- Pour into prepared mini muffin pans.
- Bake at 350 degrees for 10 minutes or until toothpick comes out clean.

German Chocolate Cake with diet lemon/lime soda with Broiled Coconut Frosting
Broiled Coconut Frosting
1 cup flaked coconut
1/3 cup brown sugar
¼ cup butter
2 Tbsp fat free milk
Combine frosting ingredients and heat in a medium size sauce pan until just melted together. Apply a small amount to the top of each mini cupcake. (I used a baby spoon to do this step.) Place in the oven and broil until the frosting is lightly golden. This step happens quickly, so watch carefully.
Chocolate Cake with diet lemon/lime soda with Peanut Butter Frosting
Peanut Butter Frosting
1/8 cup honey roasted peanut butter
2 cups powdered sugar
3 Tbsp milk
1 tsp vanilla
Combine frosting ingredients until smooth. Frost each cupcake and top with a single chocolate chip.
Lemon Cake with diet lemon/lime soda with Lemon Glaze
Lemon Glaze
1 cup powdered sugar
1 Tbsp lemon juice
1 Tbsp milk
Combine glaze ingredients until smooth. Top each cupcake with about ½ tsp of glaze
