My friend Cindy shared this lovely recipe with me. My kids LOVE them. They will be so happy to come home from school today and be able to eat them. I used the same recipe to make cupcakes with the frosting on the inside. This way I can send them in the kids’ lunches.

Cindy’s Frosted Banana Bars
Recipe type: Dessert
  • ½ cup butter, softened
  • 2 eggs
  • 1 cup sour cream
  • 1 tsp vanilla
  • 1½ cups sugar
  • 2 cups flour
  • 1 tsp baking soda
  • ¼ tsp salt
  • 2 medium ripe bananas mashed
  • 1 package (8 oz) cream cheese, softened
  • ½ cup butter, softened
  • 2 tsp vanilla
  • 3 to 4 cups powdered sugar
  1. Cream butter and sugar, add eggs, sour cream, vanilla and bananas.
  2. Combine flour, soda and salt and gradually add to creamed mixture.
  3. Spread into a greased 15x10x1 baking pan.
  4. Bake at 350 degrees for 20-25 minutes or until toothpick inserted in center comes out clean.
  5. Cool completely. (Bake cupcakes for 23-25 minutes)
  1. Beat cream cheese, vanilla and butter.
  2. Gradually beat in enough powdered sugar to desired consistency.
  3. Spread over banana bars.
  4. Store in refrigerator
