Southwestern Chicken and Beans

This recipe is based off one in the Taste of Home magazine. The flavor was just right.  The avocados were an afterthought, so they did not make it into the picture.

Southwestern Chicken with Beans

Ingredients
  • 2 tsp chili powder
  • ¼ tsp salt
  • ¼ tsp pepper
  • 6 boneless skinless chicken breast halves
  • 1 Tbsp canola oil
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup frozen corn, thawed
  • 1 cup chunky salsa
  • 1 avocado, cubed (optional)
  • ½ tsp lime juice (optional)
Instructions
  1. Combine the chili powder, salt and pepper; rub over both sides of chicken.
  2. In a large nonstick skillet, brown chicken in oil.
  3. Place chicken in a 9x13 baking dish.
  4. Mix the beans, corn, salsa and lime juice together and pour over chicken.
  5. Bake at 375 degrees for 30-35 minutes or until meat thermometer reaches 160 degrees.
  6. Removed from oven, add avocados and serve
