Herbed Tomato Chicken

I needed something quick and easy for dinner, so I started combining ingredients and came up with this flavorful chicken. You can control how much “kick” you would like it to have by varying the amount of red pepper flakes.

  • 6 boneless skinless chicken breasts
  • 1 (15 oz) can diced tomatoes, drained
  • ½ chopped sweet onion
  • 4 garlic cloves, minced
  • 2 tsp dried thyme
  • 1 tsp salt
  • 1 tsp dried rosemary
  • 1 tsp pepper
  • ½ tsp rubbed sage
  • ½ tsp oregano
  • ¼ tsp red pepper flakes
  1. Place chicken in a baking dish coated with nonstick cooking spray.
  2. In a small bowl, combine diced tomatoes, onion, garlic, thyme, salt, rosemary, pepper, sage, oregano and red pepper flakes.
  3. Spoon mixture over chicken.
  4. Bake at 375 degrees for 30-40 minutes or until temperature measures 170 degrees.
