Crunchy Asian Salad

There are probably a million different versions of this salad. I like how simple this one is. The flavors blend together so nicely. Broccoli-slaw makes it colorful and more nutritious than the traditional coleslaw variety as well. The kids liked it so much, they asked for it in their lunch the next day!

Ingredients
  • ¾ cup zesty Italian dressing
  • ½ cup sugar
  • 2 Tbsp reduced sodium soy sauce
  • 2 pkg. ramen noodles
  • 2 pkg. (12-16 oz) broccoli-slaw
  • 4 green onions, sliced
  • ½ cup dry roasted sunflower seeds
  • ½ cup sliced almonds
  • 1 lb cooked chicken, cut into bite-size cubes
Instructions
  1. In a small bowl, combine Italian dressing, sugar and soy sauce; set aside.
  2. In a large bowl, combine broccoli-slaw, onions, sunflower seeds, almonds and chicken.
  3. Crunch up ramen noodles and add to broccoli-slaw mixture.
  4. Pour dressing mixture over the salad mix and toss to coat. Keep refrigerated until ready to serve.
