Chicken Cacciatore

This is one of our all time favorites.  It is fairly easy to put together.  I like to serve this one to guests.  The red pepper flakes add some kick, so decide how much to use by how much spice you like.

Ingredients
  • 6 boneless skinless chicken breast halves
  • 1 tsp salt, divided
  • ⅛ tsp pepper
  • 2 Tbl olive oil, divided
  • 1 medium green pepper, chopped
  • ½ pound fresh mushrooms, sliced
  • 4 garlic cloves, minced
  • 1 can (15 oz) tomato sauce
  • 1 can (14 ½ oz) stewed tomatoes, cut up
  • 1 Tbl balsamic vinegar
  • 2 tsp sugar
  • 1-1/2 tsp dried basil
  • 1-1/2 tsp dried oregano
  • ⅛ to ¼ tsp crushed red pepper flakes
  • ¼ C. minced parsley
  • Hot cooked pasta
Instructions
  1. Sprinkle chicken with ¼ tsp salt and pepper.
  2. In a large skillet, brown chicken in 1 Tbl oil.
  3. Remove and set aside.
  4. In the same skillet, sauté the green pepper, mushrooms and garlic in remaining oil until vegetables are tender.
  5. Add the tomato sauce, stewed tomatoes, vinegar, sugar, basil, oregano, red pepper flakes, remaining salt and reserved chicken.
  6. Bring to a boil. Reduce heat; cover and simmer for 30 min.
  7. Stir in parsley.
  8. Simmer, uncovered, 15 min. longer or until sauce is thickened.
  9. Serve over pasta.
