Cashew Chicken

I’ve been toying with this recipe for a while now and I’m quite happy with the results. Using the slow cooker, you get the “work” done early in the day making dinner time a breeze. I use that term loosely as this was very simple to put together. My whole family enjoyed it and even came back for seconds.

Ingredients
  • ⅓ cup soy sauce
  • ⅓ cup rice vinegar
  • ⅓ cup ketchup
  • ⅓ cup chicken broth
  • 3 Tbsp brown sugar
  • 2 Tbsp honey
  • 3 garlic cloves, minced
  • 1½ tsp ginger
  • ¼ tsp red pepper flakes (add more if you like it spicy)
  • 1 Tbsp cornstarch
  • 2 lbs boneless, skinless chicken breasts
  • ½ cup cashews
  • cooked rice
Instructions
  1. Place chicken in slow cooker.
  2. In a small bowl, combine the soy sauce, vinegar, ketchup, chicken broth, brown sugar, honey, garlic, ginger, red pepper flakes and cornstarch.
  3. Pour mixture over the chicken.
  4. Cook on low for 4 hours.
  5. Shred or cut up cooked chicken and return to the slow cooker.
  6. Add the cashews and serve over hot cooked rice.
