I’ve been toying with this recipe for a while now and I’m quite happy with the results. Using the slow cooker, you get the “work” done early in the day making dinner time a breeze. I use that term loosely as this was very simple to put together. My whole family enjoyed it and even came back for seconds.
Cashew Chicken

Ingredients
- ⅓ cup soy sauce
- ⅓ cup rice vinegar
- ⅓ cup ketchup
- ⅓ cup chicken broth
- 3 Tbsp brown sugar
- 2 Tbsp honey
- 3 garlic cloves, minced
- 1½ tsp ginger
- ¼ tsp red pepper flakes (add more if you like it spicy)
- 1 Tbsp cornstarch
- 2 lbs boneless, skinless chicken breasts
- ½ cup cashews
- cooked rice
Instructions
- Place chicken in slow cooker.
- In a small bowl, combine the soy sauce, vinegar, ketchup, chicken broth, brown sugar, honey, garlic, ginger, red pepper flakes and cornstarch.
- Pour mixture over the chicken.
- Cook on low for 4 hours.
- Shred or cut up cooked chicken and return to the slow cooker.
- Add the cashews and serve over hot cooked rice.
