Blueberry Surprise Muffins

We have an abundance of Blueberries right now, so I’ve been on the lookout for good recipes to use them in. These muffins are a variation of a recipe I found in one of my cookbooks. The whole family absolutely loved them. I was hoping to freeze some for school lunches, but I don’t think they will last that long!

  • 1 package (8 oz) fat free cream cheese, softened
  • ½ cup white sugar
  • ½ cup brown sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 ½ cups flour
  • 2 tsp baking powder
  • ½ tsp salt
  • 1 cup fresh or frozen blueberries
  • ½ cup vanilla or white chocolate chips
  1. Preheat oven to 375 degrees. Grease muffin pan or use paper-liners.
  2. In a large bowl, beat cream cheese and sugars until smooth.
  3. Add eggs and vanilla, beat in well after each addition.
  4. Mix in baking powder, salt and flour.
  5. Fold in blueberries and chips.
  6. Fill muffin cups two-thirds full.
  7. Bake for 19-24 minutes or until a toothpick comes out clean.
  8. Cool for 5 minutes before removing from pan to a wire rack.
Yields about 15 muffins.
