Oh my, these are so yummy! They are a cross between a doughnut and a muffin. I found the recipe on www.owlhaven.net. They turned out beautifully. My kids are already asking me to make them again.
Baked Apple “Duffins”

Recipe type: Muffins

Ingredients
- 3 cups flour
- 1 cup sugar
- 1 Tbsp baking powder
- 1 tsp salt
- 1 tsp nutmeg
- ½ cup shortening
- 2 eggs
- 1 cup milk
- 2 cups apples, peeled and finely chopped
Topping:
- ¾ cup butter, melted
- 1 cup sugar
- 2 tsp cinnamon
Instructions
- In a large bowl, combine flour, sugar, baking powder, salt, and nutmeg.
- Cut in shortening until mixture looks like coarse crumbs.
- Combine eggs, milk and apples.
- Add to flour mixture and stir until just blended.
- Spoon batter into well-greased muffin cups, filling each about ¾ full. Bake 20 to 25 minutes or until a toothpick comes out clean.
Topping
- In a small bowl combine sugar and cinnamon.
- When “duffins” are done and before they have a chance to cool, remove from pan and dip in butter and then in the sugar mixture.
Tips
- These freeze well.
Tanya, this recipe is amazing. I have been meaning to try it since you first posted it and finally did. I made the duffins for a party and they were gobbled up. Everyone loved them. I always get lots of compliments on your recipes (the colorful baked beans are popular too). I couldn’t find the oven temp here but found it on owlhaven.net–it’s 350.
