Apple Spice Oatmeal Cookies (ADA Apple Fritter Cookies)

These are oh so yummy! I think of my dad every time I make them. Apple Fritters are his favorite!  You can make these with all white flour, but we prefer them 1/2 & 1/2.  If there is whole grain and fruit in them, do they count as healthy?  I’m going with yes!

  • ½ cup butter or margarine, softened
  • ¼ cup shortening
  • ½ cup sugar
  • ½ cup packed brown sugar
  • 2 eggs
  • 1 tsp vanilla
  • 2 cups old-fashioned oats
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • 1 tsp baking soda
  • ¾ cup whole wheat flour
  • ¾ cup all-purpose flour
  • 2 small apples, peeled and chopped (2 cups)
  • Vanilla Glaze
  • 2 cups powdered sugar
  • 2 Tbsp butter or margarine, melted
  • 1 tsp vanilla
  • ¼ cup milk
  1. Heat oven to 350 degrees.
  1. Beat butter, shortening and sugars in large bowl with electric mixer on medium speed until thoroughly mixed.
  2. Beat in eggs and vanilla until well blended.
  3. Beat in oats, cinnamon, nutmeg, baking soda and flours, scraping side and bottom of bowl, just until blended.
  4. Stir in apples and walnuts.
  5. Drop dough by rounded tablespoonfuls (scant ¼ cup) about 2-inches apart onto ungreased cookie sheet.
  6. Bake 13 to 17 minutes or until edges are golden brown and centers are set.
  7. Cool 2 minutes; remove from cookie sheet to wire rack and cool for 10 minutes.
Vanilla Glaze
  1. Mix powdered sugar, butter, vanilla and milk together until smooth and thin enough to drizzle.
  2. Drizzle about 1 teaspoon of the glaze onto each warm cookie.
