Blueberry Streusel Rolls with Lemon Glaze

Roll Dough
  • 1 cup very warm water
  • 1 Tbsp active dry yeast
  • ¼ cup powdered milk
  • ⅓ cup sugar
  • 1 tsp salt
  • 1 egg
  • ¼ cup shortening
  • 2¾ – 3¾ cup flour
  • 2 cups blueberries
  • 1 cup packed brown sugar
  • 1 cup chopped almonds
  • 2 tsp ground cinnamon
  • 6 Tbsp butter, melted
Lemon Glaze
  • 1 cup powdered sugar
  • 2 tsp lemon juice
  • 3 – 5 Tbsp milk
  1. Mix together water, yeast, powdered milk, sugar, salt, egg and shortening.
  2. Slowly add flour ½ cup at a time. This will be a soft dough, so only add flour until you can work with it.
  3. Turn onto a lightly floured surface; knead by hand until smooth (about 5 minutes) or You can knead in a mixer for 5 min.
  4. Place dough in a large greased bowl; cover with plastic wrap and let rise in a warm place until the dough has doubled in size (about an hour).
  5. Punch down and roll out the dough into a rectangle (about 15x9”).
  1. Mix streusel ingredients together.
  2. Spread streusel and blueberries over the top leaving 1 inch on one long side.
  3. Roll up tightly, beginning at wide side.
  4. Seal well by pinching edges of roll together.
  5. Cut roll into about 1” slices.
  6. Place in a greased 9x13 pan.
  7. Cover and let rise until the dough has doubled in size (about 35-40 min).
  8. Bake in a 350 degree oven for 15-20 minutes.
  9. Let cool for 5 minutes.
Lemon Glaze
  1. Mix powdered sugar, lemon juice together.
  2. Add milk 1 Tbsp at a time until desired consistency.
  3. Drizzle warm rolls with Lemon Glaze.
