Sweet and Sour Pork

This recipe was a total home run in our house. Even my picky eater came back for seconds. I sent it in the kids’ thermoses today and my husband came home for lunch just to be sure to get some of the leftovers. The recipe only calls for 1 lb of pork tenderloin. The smallest one I could find at the store was 2 lb, so I doubled the recipe. We had tons of left-overs. Not a bad thing in our house 🙂 Continue reading »

Glazed Ham

A friend and I were discussing cooking for holidays. We were lamenting the amount of time we had to be in the kitchen when we would rather be relaxing and enjoying the day. Both of us ended up making a ham last Christmas. I told her I always cook mine in the slow-cooker. It makes a lovely moist meal with only a few minutes of prep time for me. Scalloped Potatoes and Ham

The kids and I really liked this meal. Truth be told, my dear husband did not. However, as he does not enjoy ham or scalloped potatoes, I don’t think is opinion of this recipe counts 🙂 This meal is a nice change from the typical chicken or beef recipes and is really easy to make. It only takes a total of 4 1/2 hours to bake in the slow cooker, so it is a nice option for those days you want a slow cooked meal, but didn’t have time to get it in started in the morning. Our family loves this recipe. The apples and onions create a wonderful flavor combination and help keep the chops nice and moist. I make this as a freezer meal as well. I buy pork loin when it goes on sale and have my butcher cut it into 3/4 inch chops for me. They do it for free and it makes my preparation easier. Continue reading »
