Our dear friends have hosted many Muggle Quidditch games on their property. They are moving soon 🙁 , so last night was the last game. I usually help run the “Three Broomsticks” where we have all kind of treats from butterbeer, licorice wands, chocolate turtles, every flavor beans, popcorn, etc. I decided to make pumpkin cookies to add to the offerings. I love the flavor of pumpkin chocolate chip cookies, but not the texture. They are usually to cakey for me. So I decided to add oatmeal to the mix and see what happened. The results are wonderful! I made 9 dozen cookies they are all gone now. The teenagers LOVED them! I had originally thought to make a chocolate glaze, but decided to go with a spiced glaze. These are a new family favorite!
This is a just a review for these lovely cookies. I made these without any alterations to the original recipe, so I am simply linking you to the source! The Cooking Photographer came up with a delicious way to combine apple cider and caramel into a cookie. She uses apple cider drink packets in the dough and wraps it around a caramel. I could not find the actual square caramels so I used caramel bits. These are best eaten warm, but are yummy anytime!
These are so easy and so yummy. They are a great dessert for us because we almost always have all the ingredients on hand. Thanks to my friend Anne for helping me figure out the drizzle!
Oh my, these are good. I made them for a group of teenagers and they were devoured! I used the leftover frosting on a graham cracker and was amazed that it tasted just like a “Nutter Butter” cookie. My family is begging me to make these again in large quantities. I think we can safely say they are a hit!
I decided to play with this recipe to see if I could lighten it up a bit. I LOVE them even more than the originals. They are soft and taste even better! The other day, my son Jeffrey was bored and hungry for a snack. I told him to find a recipe and make something. After trying to bargain with me that he would find the recipe if I would make it, he set himself to the task. He did choose one that had to chill overnight, but he was happy with them.
