Sweet Baked Chicken
I just got back from a two week trip to visit family and to take my daughter to get her wisdom teeth removed. It was a busy trip and I am happy to be home again. While I was there, I ate some leftover baked chicken my mom had made the night before. It was really good, slightly sweet and nice and moist. I couldn’t determine what she had used for the flavor, so I asked her. She smiled a little sheepishly and said “Well, I was out of corn flakes so I used Frosted Flakes.” I decided to try it out on my family last night and it was a hit! This recipe is super easy and tastes great!
Almond Crusted Chicken
I’ve had such a lovely day today. My dear daughter is home from college for a visit. We spent the day shopping 🙂
When we got home we made up this recipe for dinner and I loved it!
The Italian dressing gave it nice flavor and the almond crust was as pretty as it was delicious.
I have to say that these rank among my families favorite meals. My kids will eat them either hot out of the oven or cold as leftovers. You can make it easier by using store bought crescent rolls, but I find it cheaper and more filling to make the rolls myself. To make these lovely bites, I combined my Mom’s Dinner Rolls recipe and my Creamy Chicken Filling recipe. I make the full recipe for my rolls and end up with about 36 chicken rolls and a dozen plain rolls. That may seem like a lot, but believe me these get gobbled up quickly! Some of us like to dip them in mustard. If I feel like adding a little more, I will make a chicken gravy to serve over the top. I like to make these to take with us on road trips. They are tidy and filling.

Italian-Pesto Chicken with Vegetables
A simple to prepare and satisfying meal. It smells delicious while cooking too.
I’ve been toying with this recipe for a while now and I’m quite happy with the results. Using the slow cooker, you get the “work” done early in the day making dinner time a breeze. I use that term loosely as this was very simple to put together. My whole family enjoyed it and even came back for seconds.
Crunchy Asian Salad
There are probably a million different versions of this salad. I like how simple this one is. The flavors blend together so nicely. Broccoli-slaw makes it colorful and more nutritious than the traditional coleslaw variety as well. The kids liked it so much, they asked for it in their lunch the next day!
Pesto Chicken Alfredo
I wanted a creamy pesto sauce for my pasta and chicken, but I didn’t want it to be too heavy. I’m quite happy with the results. The whole family enjoyed it.
Southwestern Chicken and Beans
This recipe is based off one in the Taste of Home magazine. The flavor was just right. The avocados were an afterthought, so they did not make it into the picture.
Italian chicken loaf
My family really liked this recipe. They ate their fill for dinner and then fought over the leftovers the next day. You could of course make your own bread dough, but the frozen loaves make this recipe simple. I’d say this one is a keeper!
Summer Chicken and Vegetable Bake
We really enjoyed this meal. The sweet onions and carrots really add a nice flavor combination to the zucchini and garlic cream sauce. I think I may add some yellow squash from my garden to this recipe too.
