This recipe is a product of the last minute “What’s for dinner mom?” dilemma. It had been a crazy day and I was hunting through my cupboards and refrigerator to find something to throw together. We really liked the result and it was nice to use up some of my leftovers at the same time.

I really enjoy hummus, but hate how much it costs. So today I ventured out and made my own. I can’t believe how easy it is and how versatile I can make it. Baked Pita Chips seemed like the natural compliment to hummus. I served them with dinner tonight and everyone enjoyed it. The kids requested it in their lunches tomorrow too! Continue reading
